Tonkotsu Kazan Ramen at Liang Court


Time check: 10 pm. While most of the restaurants are already closed, we found this Japanese ramen restaurant, Tonkotsu Kazan Ramen at Liang Court still bustling with people.


Was super happy after the enthusiastic waiter told us that they are still accepting orders as they are opened daily from 11am till 10.30pm! That means I can have a proper dinner instead of eating fast food. Heehee.


  Tonkotsu Kazan originates from Osaka, Japan. Well known for their tonkotsu (pork bone) broth ramen presented in a kazan (volcano) image that is served with a dash of their personal style, later I will show you how to cook delicious Kazan Ramen. 

  
I love how they took the effort on the decor of the restaurant. Every part of the restaurant makes a good spot for photo taking. The middle part of the tables are made of glass and serves to display all the cute little Japanese ornaments. So even if you are bored with the person you are having dinner with, you can also check out the little stuffs inside. It really makes you feels like you are dining in Japan.


My Kazan Curry Ramen served in a 300 degree Celsius pre-heated hot stone bowl. The waiter later pours the broth from the pot into the hot stone bowl right in front of my eyes. The hot stone bowl was covered with the red funnel-like lid and was left to cook for about a minute. There is the hourglass to time it. As the food is cooking, the steam from the heat is being release through the opening of the funnel, thus creating the "volcano eruption" effect which is actually quite cool. 

The ramen that was used is much thicker than usual and is very chewy and doesn't get soggy too fast. The broth is so flavourful and remains piping hot even after the ramen is finished. Every order of the kazan ramen also comes with a bowl of rice, which I'm too full to enjoy. The ramen itself is a huge potion already but it's still good to try the rice with the broth. Different feeling.  


Non-Kazan Ramen is nice too, nothing very special. It's still more worth to check out the kazan ramen since it's their signature dish.
